This past weekend I ventured off to Whistler for a relaxing stay at the beautiful Fairmont Chateau Whistler. I always love spending time in Whistler because it’s super relaxing and the fresh air feels so good. It only takes about an hour and a half from Vancouver and it’s one of my favourite drives. The Sea to Sky highway is gorgeous, windy roads and chock full of beautiful photo ops along the way.
After checking in, we were greeted with a delicious platter of chocolate and berries in our room. A stunning view of the lush mountains and inviting pool awaited us as well. So, we dropped off our luggage and headed out to the village (only a short walk from the Chateau). We grabbed some lunch at the nearby Earls restaurant which was delicious as always.
After lunch, we kicked off our Friday afternoon with a soak in the hot tub which was much needed after a busy week in the city.
After relaxing in the hot tub, we went back to our room and got ready for a wonderful night of feasting ahead. We started off our Friday evening the best way we know how; happy hour at Portobello. I tried a delicious gin cocktail before heading off to our restaurant for the night.
We headed to The Grill Room inside the Fairmont Chateau Whistler for dinner. The Grill Room was just launched their new summer menu. To say it was delicious would be an understatement. The amount of detail and passion that went into each dish was wonderful, you could tell how excited the chefs and servers were about this menu. The menu was predominantly seafood, which being a pescatarian myself was perfect for me. Think sablefish and caviar, albacore tuna (my all-time favourite) with grilled lemon served alongside a bed of roasted radish, fennel and shallots.
The meals were paired with sparkling wine from Bella Wines. These were honestly the best sparkling wines I’ve ever tasted. I’m not much into sweet wines anymore and these were perfectly dry. We got to try their sparkling white, red and even rosé. They’re local from BC and even named their winery after their pup Bella (of course I love the name considering my pup’s name is Bella too).
The meal was 6 courses, followed up with the most decadent dessert I’ve ever had. Enter the Underwater masterpiece, complete with creme brulee, white chocolate coral (seriously) and dark chocolate, this was aptly named the Underwater Desserts Labyrinth.
Once again, the Fairmont Chateau’s passion truly showed with this exceptional meal which was really a wonderful experience in itself. Also, it was World Oceans Day and our food was sustainably sourced with Ocean Wise seafood and organic produce grown by their local farmers.
Our second day in Whistler consisted of a delicious breakfast at the Fairmont Chateau’s The Clubhouse. The Clubhouse has just started serving breakfast which is perfect timing for golf season. (The Clubhouse looks out onto a gorgeous golf course) and of course, just in time for a beautiful summer season ahead. We all had their salmon bowl which was incredible. The salmon bowl had tater tots, scrambled eggs (or you can substitute for poached), green onions, capers and of course, artisan smoked chinook salmon. It was filling and just the right amount. We were also surprised with The Clubhouse’s fan favourite—fried oatmeal. Yes, it’s a thing and it’s as good as it sounds. The steel-cut oats were pan-fried in maple syrup, lemon curd and blackberries. It was sweet and was served in a beautiful pan topped with mint for greenery and flavour.
After the short but much-needed walk back to our hotel, we indulged in a few relaxing hours at their beautiful pool. We sipped peppermint tea, reflected on a relaxing weekend and indulged a bit more in the hot tub before making the journey back to Vancouver.
Fairmont offers a true experience for their guests. I always feel instantly relaxed as soon as I step into the hotel’s lobby. I’ll definitely be back!
