One of the ultimate summer-time salads is Tabouli. For those of you that have never heard of it, it is a traditional Mediterranean salad and is one of the most refreshing, time consuming yummiest salads. It does take awhile, but the payoff is well worth it, if you are a vegetarian (like me,) you will love it, it consists mostly of parsley and wheat.
You’ll need:
1/4 cup crushed burgul (wheat)
1 lg. tomato
3 green onlines, chopped very fine
3 bunches of parsley, once again, chopped very fine (may use food processor if you like)
lemon juice
sprinkle of mint
salt and pepper

I love salads! I've been digging my own chicken poppyseed salad. I use spinach, pecans, chicken, strawberries, blueberries, and poppy seed dressing! It's absolutely stunning.
