One of my (many) New Year’s resolutions is to not only eat healthier, but be the one cooking in the kitchen. I don’t normally cook very often as I find it quite time consuming and (sometimes) stressful, but I am making a change this year and want to become more comfortable in the kitchen. This is why for my first recipe of 2016 I chose a simple desert. The desert I chose is not only healthy because it is made with zucchini but it’s so delicious. Honestly, I am not a huge sweets person (I know weird right?) so I wasn’t too inclined to make something on the sweeter side but because these particular brownies are loaded with zucchini I felt it necessary to test out.My little helper..
This recipe absolutely delicious, the zucchini made the brownies very moist and soft, and the chocolate that was used is dark chocolate which is healthier than milk chocolate. They don’t taste weird with the zucchini added into them and the fact that these brownies are delicious is a #winwin.

Recipe for Chocolate Zucchini Brownies:
6 oz (170 g) dark chocolate
1/4 cup (60 mL) butter, room temperature
1 cup (250 mL) brown sugar, packed
2 cups (500 mL) peeled and chopped zucchini (1 whole zucchini)
1/3 cup (80 mL) canola oil
1 Tbsp (15 mL) Greek yogurt
3 eggs
2 Tbsp (30 mL) cocoa powder
1 tsp (5 mL) vanilla extract
1 1/4 cups (310 mL) spelt flour
1/4 tsp (1 mL) sea salt
1 cup (250 mL) dark chocolate chips

Yumm!!! I’ve given up chocolate completely (that was my New Year’s Resolution for 2015) but I’m going to try this and give the brownies away!! (I don’t even lick the bowl any more!!)
Looks great…unfortunately I have never had zucchini and too chicken to try it…LOL
