I’m really trying to make a conscious effort to eat healthy, and now that it’s getting quite warm out, mealtime has me craving fresh salads. Continue reading for a delicious spicy mango salad recipe.
If you’re busy like me and always running around from events to meetings all day, then the last thing you want to do is worry about prepping for dinner. Am I right, girlbosses/mumas/everyone out there? Especially salads, because they can be quite time-consuming.
That’s why I’ve started to get in the habit of meal prep. When I had my appointment with a nutritionist a few months ago, post here, she told me to start prepping on Sundays for the week ahead. Needless to say, Sunday nights work just perfect for prepping my meals for the week. That’s exactly what I did when I served up this delicious spicy mango salad.
To make my life a lot easier, I stored my ingredients in the Rubbermaid BRILLIANCE food storage containers. I seriously love that these food storage containers are designed with an airtight leak-proof seal and they even have innovative latches. The leak-proof benefit is perfect for food like mangos because we all know those can get messy. I also love that they’re crystal clear so I can easily determine what I have in my fridge without having to dig around too much.
On top of everything else, the Rubbermaid BRILLIANCE containers are stain resistant, heck yes! Also, if you were making a meal that called for heating up, don’t worry about making too many dishes dirty because these are even designed with innovative vents that allow microwaving with the lid on. The latches are open to help reduce splatters, too. Besides that, these food storage containers also stack perfectly, no more having to make multiple trips.
Thank god, I feel like I’m a little crazy and always try to carry/balance everything possible. Now, back to the salad, this is a delicious recipe especially for the hot weather we’ve been having. It’s fresh, light and mixed with a beautiful melody of flavours. Check out the recipe below.
Ingredients
- 1 teaspoon hot sauce, or more to taste
- 1 teaspoon sugar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground cumin
- Juice of 2 limes
- 2 cloves garlic, finely chopped
- 1/2 cup olive oil
- 4 mangoes, sliced
- 4 Roma tomatoes, halved and sliced
- 1 small jicama, peeled and cut into julienne
- 1 red onion, thinly sliced
- 1/4 cup fresh cilantro leaves
- 8 leaves fresh basil
- 2 avocados, sliced
Directions
Whisk together the hot sauce, sugar, salt, cumin, lime juice and garlic in a small bowl. Whisk in the olive oil. Add the mangoes, tomatoes, jicama and onion to a large bowl. Pour over the dressing and toss to coat. Add half the cilantro and basil and toss again. Stir in the avocado. Serve garnished with the remaining cilantro and basil.
