With the winter season almost here (this year has flown by!) it’s time for some warm comfort meals at home. Speaking of comfort food, my go-to is spaghetti. However, because I don’t eat meat or dairy, I like to make it vegan. Continue reading for a no-fail vegan spaghetti recipe to try.
To help me in the kitchen, I used my new items from 360 Cookware. They have a gorgeous variety of cookware and bakeware to amp up your cooking. Spaghetti was the perfect recipe to test out my 360 cookware because spaghetti calls for multiple pots.
Due to COVID, I’m avoiding going out to eat at restaurants. Therefore, cooking at home has become more prevalent in my household. However, I am not exactly the best cook out there. But I have been enjoying testing out more recipes in the kitchen.
VEGAN SPAGHETTI RECIPE:
Ingredients:
- A handful of spaghetti, enough for about 4 servings (or however many you want)
- 2 tablespoons of olive oil
- Half head of garlic, chopped and minced
- Italian seasoning
- Extra basil
- Extra parsley
- Half a medium-sized onion
- 2 peppers of your choice, diced
- 28 fluid ounce whole plum tomatoes, canned
- Handful of arugula
- Half cup of dry red wine (I love Township 7’s Merlot)
- Salt & pepper to taste
Instructions:
- Prepare and chop veggies.
- Boil and drain spaghetti.
- Cook veggie sauce for half-hour on medium, let simmer.
