Fresh Tomato Salsa Recipe

As I’ve been really trying to eat healthier this year, I’m all about making fresh recipes. I made the most delicious fresh tomato salsa recipe which I can’t wait to share with you. However, it can be a pain to keep your produce fresh, especially if you’ve been out of the house all day.

So, before I headed out to my appointments for the day, I made sure to have my fresh vegetables ready to go in Rubbermaid’s new FreshWorks Produce Saver containers.

FreshWorks keeps produce fresher up to 80% longer* than traditional produce packaging. How does it do it? It uses the revolutionary built-in FreshVent™ lid, which naturally regulates the flow of oxygen and CO2, in and out of the container to create the optimal environment so produce stays nearly as fresh as the day it was picked.

The CrispTray™ at the bottom elevates produce away from moisture and promotes proper airflow to help reduce spoilage.

Now that our veggies have been taken care of, onto making the delicious (and healthy) fresh tomato salsa.

Fresh Tomato Salsa

Makes about 3 cups, prep: 20 minutes, chill: 1 hour (super easy recipe for entertaining!)

Ingredients:

1 1/2 cups finely chopped tomatoes (3 medium)

1 fresh Anaheim

pepper, seeded and finely chopped, or one 4-ounce can diced green chili peppers, drained

1/4 cup chopped green sweet pepper

1/4 cup sliced green onions (2)

3 to 4 tablespoons snipped fresh cilantro or parsley

2 tablespoons lime juice or lemon juice

1 to 2 fresh jalapeño, serrano, fresno, or banana peppers, seeded and finely chopped

1 clove garlic, minced

1/8 teaspoon salt

1/8 teaspoon pepper

Directions:

  1. In a medium mixing bowl stir together chopped tomatoes, Anaheim pepper or canned chili peppers, sweet pepper, green onions, cilantro or parsley, lime juice or lemon juice, jalapeño pepper, garlic, salt, and pepper.*
  2. Cover and chill at least 1 hour before serving. Serve as a dip for chips or as a condiment for appetizers or main dishes. Makes about 3 cups.

*Note: For a slightly smoother salsa, place 1 cup of the salsa in a food processor bowl or blender container. Cover and process or blend just until smooth. Stir into remaining salsa.

My favourite part about the Rubbermaid FreshWorks Container is it reduces so much waste. How many times have you had to throw away produce because it was spoiled?

    Good vegetable storage is a must as fresh produce is not cheap. I enjoy fresh salsa and love serving it to my boys rather than the stuff in the jars.

    I would store different types of salads in the containers and take them to work with me the next day! Leafy greens also don’t seem to last very well in the store packaging so I’d like to try these containers out. 🙂

    Yum. I have been looking for new recipes to add some variety in my life. My husband travels for work and my son is from a previous marriage so sometimes I have weeks by myself while they are both away. Quick and easy meals on those days is all I do.

    I’m surprised that I’ve never made homemade salsa before. I don’t like the store-bought kind, maybe I would like the homemade version a lot better since I can customize it to my taste preferences. Love your recipe!

    Ooh, I love a good container for veggies. I usually love to chop zucchini, carrots, and other veggies to add into meals later. Then it goes into stir fries, curries, or stews.

    I would make my favorite salad. It requires avocado, romaine and or kale, strawberries, cucumber, and pine nuts. I have actually gotten my 4 year old to eat it- minus the kale! Love it. Top it with vinaigrette and it’s so GOOD! It’s actually a ‘detox’ salad… but it’s awesome.
