I love the summertime because it means spending time outside and catching some rays. Additionally, it means serving up some delicious (and healthy) recipes for easy summer entertaining. That’s why I’m excited to share my go-to tasty fish tacos and fresh corn salad recipes with you.

These tasty fish tacos have a hint of sweetness thanks to Vidalia Onions which in contrast pair well with spicier toppings such as cilantro and jalapeños. In fact, I’m a huge fan of tacos, especially for entertaining because they’re easy to whip up and having an abundance of different toppings is always fun.
Tasty fish tacos recipe:
Ingredients:
- white or whole wheat corn tortillas
cod fish - teaspoon salt
- teaspoon black pepper
- tablespoon olive oil
- green or purple cabbage (small)
- if desired, add avocado (medium, sliced)
- Roma tomatoes (diced, optional)
- diced Vidalia Onions
- bunch cilantro (longer stems removed)
- lime (cut into 8 wedges to serve)
Instructions:
- Line large baking sheet with parchment. In a small dish, combine seasonings.
- Lightly drizzle fish with olive oil. Bake t 375 for 20-25 minutes.
- Start to assemble tacos, start with pieces of fish, add remaining ingredients. If desired, serve with a fresh lime wedge to flavour the tacos.
Next up, you can’t go wrong with a delicious fresh corn salad. Salads are a huge staple in my household, especially in the summer because who doesn’t love eating fresh ingredients that don’t require too much time cooking over a hot stove? I’ve been really trying to make a conscious effort to eat healthier and that means finding healthy recipes that are actually filling.
Corn salad is easy to make and I find that it’s always a crowd favourite. The Vidalia Onions in particular add just the right amount of sweetness to the salad and the medley of flavours worked so well together. This corn salad features corn, fresh tomatoes, chopped Vidalia Onions, fresh basil from the garden, and some delicious olive oil poured on top. Not only is this a winning recipe to make for guests, but it’s easy and quick to put together for a busy weeknight dinner.
Fresh corn salad recipe:
Ingredients:
- 4 cups fresh or frozen corn, defrosted
- Extra-virgin olive oil
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- Toss all ingredients in a large bowl, then season with salt and pepper
