Lately, I’ve been trying to eat healthier. Now that we’re into the fall season which typically calls for warm dishes with carbs and calories. I wanted to make sure I was staying on the right track and not wasting all of my healthy eating habits from the summer. So when I found this gluten and dairy-free pasta recipe, I knew I had to give it a go myself. Continue reading for how I am staying motivated during the fall season.
I’m a vegetarian (with an exception to sometimes eating seafood) and am lactose intolerant. You might be thinking, “good luck with your bland vegetable recipes”. I’m here to dispel the myth that those with dietary restrictions eat boring meals. Enter, mine and your new best friend, gluten-free pasta from Barilla.
Barilla Gluten-Free has a taste and texture similar to “regular” pasta and the recipe I tried it out with is easy to make and delicious. Because the Barilla Gluten-Free pasta is made with non-GMO corn and rice, those with gluten allergies can eat this.
As I said, I’m lactose intolerant, so creating a creamy alfredo like pasta wasn’t an option. Thankfully, avocados came to my rescue.
This pasta has zero cream or butter and it’s a heck of a lot healthier, too. To make the ‘creamy’ consistency, all you need are a couple of ripe avocados.
Add some fresh basil leaves, lemon juice and olive oil. Throw these ingredients into a food processor and you’re on your way!
Toss this mixture with your Barilla Gluten-Free pasta and add in some fresh cherry tomatoes for flavour and colour.
Ingredients:
- 12 ounces pasta (can use either spaghetti or penne)
- 2 ripe avocados, halved, seeded and peeled
- 1/2 cup fresh basil leaves
- 2 cloves garlic
- 2 tablespoons freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper, to taste
- 1/3 cup olive oil
- 1 cup cherry tomatoes, halved
Directions:
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- To make the avocado sauce, combine avocados, basil, garlic and lemon juice in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside.
- In a large bowl, combine pasta, avocado sauce, and cherry tomatoes.
- Serve immediately.

Barilla is definitely our favorite brand of gluten-free pasta! This looks quite tasty, especially since I LOVE avocados!
