I found the best recipe ever a few weeks ago and had to make it. It’s a blue lagoon smoothie, and I love it because it’s inspired by the blue lagoon in Iceland which is so cool. It makes sense to make recipes that are inspired by places you travel to, why not? It’s such a cool concept. Anyways, not only does this recipe look cool but it tasted delicious and it’s extremely healthy too.
- 1 large banana
- ¾ cup plain, non-fat Greek yogurt
- 1 tablespoon unsweetened coconut flakes
- 1 teaspoon spirulina
- 1 tablespoon chia seeds
- 1 tablespoon fresh blueberries
- 3 tablespoons coconut water (can also sub tap water)
- peeled coconut
- 1 kiwi, cut
- fresh blueberries
- chia seeds
- ried coconut flakes

INSTRUCTIONS
- In your blender, combine all smoothie ingredients and blend until smooth.
- Pour into peeled coconut, then top with kiwi, blueberries, chia seeds, and coconut flakes!
At first I didn’t know what spirulina would be like cause I’ve never cooked with it before but I really liked it, you can’t really taste it but it’s very healthy for you, great for the immune system and that’s the reason for the darker green lagoon turnout.
I’m also a huge fan of coconut too (except for coconut shavings, don’t ask me why) and to be able to use a natural coconut in a recipe is so cool, the coconut water within it was fresh and delicious (can’t wait to throw it into some smoothies!) and of course the real coconut inside was amazing. So. Good.
Because I’m a vegetarian (sometimes eat seafood though) I like to try new things that are healthy and that make sure I get the right amount of nutrients.
I seriously love the way this turned out, the lagoon is quite green and thick though, next time I won’t use such a thick greek yogourt, I think that would be better.
Overall, I’m really happy with this recipe and definitely recommend it. It’s a fun activity to get your creative juices flowing and very healthy too.
