I’m all about maintaining a healthy diet this year and if you’ve read my post on Wellness Resolutions than you would know I’m taking it pretty seriously. As a vegetarian (sometimes pescetarian), I don’t always have the most balanced meals, and I’ll admit there are times when I’m constantly eating the same mundane thing for lunch every day. That’s why I was ecstatic when I found this vegan sandwich recipe from PopSugar Fitness. This is something you can make to take to work for lunch and feel like you’re eating something really healthy and filling.
I really love cooking with chickpeas, I even threw these into a salad too and it made for a delicious (and filling!) meal.
This sandwich has both protein and fiber and it’s as tasty as it is good for you. The hummus and avocado provide both protein and fiber and layers of veggies create that tasty crunch we all long for in a sandwich.
Here’s how to make this beauty:
INGREDIENTS
- 2 slices of sprouted whole-grain bread
- 2 tablespoons hummus
- 3 thin slices of cucumber
- 2 thin slices of tomato
- 3 slices of avocado
- 1/4 cup alfalfa sprouts
- 1/4 cup grated carrots
DIRECTIONS
- Toast your bread.
- Spread one tablespoon of hummus on each slice of bread, layer up your veggies, and enjoy!
